- Good question. This is a time-saving alternative to manually having to solve CAPTCHA questions to prove there is a person there and not a bot/script/process. - Right, so Cloudflare still gets to MITM the DNS traffic and if Cloudflare goes down, you go down. I'm glad you're considering other options. One of the main reasons for using a non-Cloudflare DNS provider is fighting against the single point of failure that is Cloudflare.
